Coleslaw on a sandwich? (Dizzy chp. 3)

It has been awhile since I have written about my favorite little bar/restaurant. Life sometimes throws curve balls and you either hit them or you swing and miss. Well the last month and half has thrown us a lot of curve balls and we have swung and missed. We finally hit a home run on Wednesday 13-August-2025 as a party of three with my oldest son along for the ride.

My wife ordered the chicken parmesan and the boy ordered a dizzy burger. I was torn. Smoked pork quesadilla or NY deli pastrami sandwich? What would you choose? I chose the pastrami. More on that later… My wife’s chicken parmesan arrived seconds ahead and the plate appearance alone made this dish a highlight. The chicken was delicate and light from the one tiny little morsel my wife afforded me. I had a hard time tasting the flavor of the dish as I had finished a big bite of my sandwich.

One incredibly scrumptious sculpture, and how I wish I would have drank some water before that delicate morsel. I love how Chef Toby assembles an entree. You can see how the flavors ascend on the stack. Imagine the layers of flavor as you chew. Yes, that may seem gross… play along… cheese, chicken, sauce, etc… This is why I keep coming back to Dizzy Horse. Chef’s attention to detail.

It is hard to keep food in the restaurant when it tastes this good. Maybe we need a go fund me for chef in order to get him some more cooler storage space… but where would he put it??? There really isn’t much room on the lot for anything. There is a BBQ joint at the golf course I work at in the summer that rents a small refridgerated semi-trailer. They are always filling the fuel tank on it… When I mowed the front lot today at the course it got me thinking… How can we help Chef ease his burden a bit??? I digress…

Coleslaw on a sandwich. I never knew I needed coleslaw on a sandwich until I came to Dizzy Horse. Chef’s coleslaw is always fresh, and his dressing is so thick and creamy. The acidity of the dressing is perfect. Chef could sell his coleslaw wholesale in my opinion. It is a food group unto itself. When I first had coleslaw on a sandwich at Dizzy Horse I didn’t quite know how it would go, but I was won over by that first bite. Coleslaw provides all the crunch one would get from lettuce and tomato, but it adds flavor far beyond the standard sandwich greenery.

Below the coleslaw on this sandwich was a generous amount of tender pastrami smothered in cheese and a drizzled Russian aioli sauce. All of this was framed on lightly marbled rye bread. The flavor cascade was as beautiful as the textures. The rye bread’s grilled coarseness held onto the aioli and coleslaw dressing giving an acidity and sweetness followed by the creamy cheese that smothered the salt and peppery pastrami. The pastrami was so delicate and tender. I have never had this kind of pastrami in the QC ever. Chicago, NYC, and St, Louis have delivered good pastrami in my travels, never the QC until Chef Toby hit me with his.

I was able to finish half the sandwich that evening and the other half did well the night after. My favorite thing about Dizzy Horse fries is the sea salt that is sprinkled on them. Sea salt is such a treat compared to the lame iodized salt or nothing at all by other restaurants. The flavor of the salt with the fried potato reminds me of a Miss Vickie chip that failed to get sliced finely. These small details change the meal experience.

This meal was our first dine in meal in nearly two months. It was worth the wait. We finally broke our way home to score some runs. BTW the boy enjoyed his triple dizzy smash burger too!!!

Now I want to take a moment and defend Chef Toby and crew. If you follow their facebook page there have been some insurmountable challenges facing them. Stolen meat, late deliveries, running out of food, and of course abusive rude customers that think they are the only ones that matter. We all need to show empathy. Walk a mile in Toby, Dallas, and the crew’s shoes. What they deliver is special. It is a small piece of magic in a world that seems to be falling down around us. Dizzy Horse is a place to forget about the outside world for a brief moment and share a meal with your family and friends. If you are visiting these fine people for the first time, go without preconceived expectations. Check the facebook page before going, communication is a two way street. Wait for the surprise. Break out and speak to other patrons. Most importantly thank them all for their hard work and struggle. We are all human… we all feel… be patient and supportive… show empathy always… There is one Dizzy Horse. It is special. …enjoy the ride… Keep it Dizzy… Enjoy every meal! Thanks Chef for your sacrifices!!!
